To get to the root of your question, you could ask if your specific choice of house affects the story. No, your specific house does not affect the story in different ways.. You'll get a few different lines of dialogue, and of course you'll want to befriend the specific students in your house, but other than that, which house you select doesn't change anything or matter.
However, Hogwarts Legacy is an RPG, which means that you are playing a role as a student at Hogwarts, so selecting a house that is perfect for your character is the whole point. Whether you play as a version of yourself or a fictional character of your own creation, selecting a house gives you the character's identity and purpose.
When it comes to relationships, you will have the same opportunity as any other student in any other house to befriend whoever you want. No matter what the movies have taught you, there's no rule that says Gryffindor and Slytherin can't be friends, Ravenclaw has to be shy and nerdy, or Hufflepuff has to be a coward.
In Hogwarts Legacy, everyone will experience the same core story and they will be able to decide for themselves which friends to make and whether they want to walk the path of the Dark Arts.
